Staff was friendly and efficient on my large order. They made right anything that was left out. All Ribs Are Awesome. Great house salad. Only downfall was the wimpy chicken fingers (only two scrawny ones for $5.99) otherwise everything was very reasonably priced and delicious.

I've traveled every state in the Southern US eating some very fine barbeque during my many trips so I had very high expectations when trying BBQ Republic. WOW was I ever impressed with Carmel Mountain BBQ Republic; my pulled pork sandwich ranked up there with great ones I've had in my favorite spots, Alabama, North Carolina and Texas. The BBQ sauce is superb. The owner pays extra attention to all the quality of the food he serves, i.e the salad is very fresh with homemade coupons. I know I'll be a regular at BBQ Republic and won't have to travel to the south when I have a craving. =) I'm Happy.

The server's shirt said something about taste being king, but unfortunately, the only taste on my plate was sugar. I ordered the 2 meat platter, brisket and pulled pork, with a side of coleslaw. I mistakenly forgot to request the sauce on the side - mea culpa.

The pulled pork was very smoky, and lightly brown, almost as though the meat had been cooked, pulled and then re-introduced to the smoke a second time. Not traditional, but not bad. Relatively moist, it was the best part of the meal.

The brisket was tender and decently moist, but had no visible smoke ring and no bark. Maybe a trimming issue, but if that's the case, they're taking a lot of flavor away. The slices were of varying thickness, and the two thickest were too thick, leaving even tender brisket in too large strands in the mouth.

The sauce was sugary, cloying and overwhelming, and unfortunately, covering 60-70% of the meat. I appreciate the need for some sweetness in a BBQ sauce, but it needs some kind of counterpoint of peppery heat, vinegar bite, something. This was like buffet sweet and sour sauce - red, sweet, and nothing else.

The cornbread was a sweet northern style corn bread/cake - something I typically enjoy, but after the sauce, it was just too much.

The slaw was the only thing not sweet on the plate - it wasn't sweet or savory, or much of anything, really. Packaged cabbage mix tossed with an abundance of bland, tasteless sauce. No vinegar tang, no mayonnaise richness, no anything - just white and liquid.

At nearly $20 for a 2 meat plate and a small drink, the meal was underwhelming, terribly over sweetened, and highly disappointing.

This is some of the best BBQ I've ever had. Has a great smokey flavor and the sauce is sweet with a little bit of spicy. Excellent taste and great price.
