True Japanese Food and Service.

I've spent a lot of time in the regions of Japan. If I think of or walk into Fuji it is like being back in one of the little family owned places I found all through Japan. The owners are the operators. The Chef and his Wife here do a fantastic job of preparing food, dealing with the patrons, being seriously friendly, being attentive to detail, and providing cleanliness.

This is a small corner mall that has mostly well established merchants. The restaurant itself is a little worn from so many years of constant use. It is a well know "Locals" dining spot. But, who need a load of today type decor. I come to eat, not worry that I don't have neon and strobes.

Hibachi items are all made fresh in front of your eyes. Here you have neighbors around the same flat grill as you. I've never seen anyone have a problem or leave with a long face. It is god food that is done 'right".
There is a very respectable sushi and sashimi menu. All this fare is cold and very fresh. The items are made with the skill of a Sushi Chef who has worked for years at this trade. My favorites are on the regular dinner menu that my wife and I eat in small booths or at one of the tables away from the Hibachi tables. This is REAL Japanese eating. My personal favorite is the broiled mackerel. I can remember sitting on little stools at a walk up counter in Shibuya which is part of Tokyo eating a grilled mackerel along side a half dozen old working men of the area who were doing the same thing I was.

The prices for what is served here are extremely reasonable. You can't beat the prices for what you get in quality and quantity.

This is authentic family cuisine from japan here in Las Vegas. Try this small family business and you will be a fan too.

Granted I'm only 23... but I've worked in the service industry before. Fuji had really fresh everything and the staff was so knowledgable!!!! I recommend combo plate C with the salad with their own special ginger dressing. Ask for MOE! She was the sweetest waitres I've ever had in my life! I will now be eating at this place very often...because of MOE!!!
