I cannot even explain my love for Watercouse foods. Every time my boyfriend and I go to Denver I always factor in $50 for a trip to Watercourse because we know we'll end up eating there. I love their breakfast sandwich and their buffalo cauliflower wings and their mac n cheese. The atmosphere is eclectic and peaceful, they play awesome music (chill/electronic I guess is how I could describe it... I've heard some Odesza & Emancipator) and they are 100% compassionate. I take my non-vegan friends here whenever they come to visit and they ALWAYS leave saying "If I had food like this every day I would be vegan in a heart beat" Thanks for being awesome Watercouse!

I love watercourse! Such good vegan food! You really can't go wrong with anything on their menu, it's all delicious!! It can get pretty busy Friday and Saturday nights, but it's well worth the wait! Just go! You won't be disappointed. My favorite is the grinder sandwich.

Food is excellent and the staff are very warm and cordial. The ambience is pleasant and the place provides lot of space and privacy for a quite lunch or dinner.

Excited to come here based on recommendations from vegan friends who once lived in Denver. We ordered the cauliflower "wings" to share as an app and I decided on the monti pasta dish with zucchini noodles while my friend went with the jambalaya. The cauliflower wings came out quickly and had flavorful sauces (we went 1/2 buffalo and 1/2 BBQ) but the breading lacked crunch and the whole thing was just kind of greasy and mushy and heavy. The accompanying blue cheese dip was fine, but nothing to get excited about. We ate less than half of it. When our entrees came out, I was a little put out to see the mess that was set in front of me, it looked like it had been pre-chewed and then covered with cream sauce. The sauce covering the monti pasta was WAAAAAYYY too heavy for my tastes, there was too much of it, and it tasted strongly of coconut- strangely out of place with the italian flavors of the dish. Worst of all the vegetables were all over cooked- it was a limp and unappealing mess that tasted no better than it looked. My friend's Jambalaya was nicely plated, but over-all was lacking in flavor- it needed a few more pinches of love and some time on the stove at low heat for the flavors to develop and meld. The components of the dish were all cooked well enough, but it tasted like the dish was assembled in a pan using pre-cooked rice, beans, sausage, etc- and jambalaya is an all day on the stove kind of dish, if you aren't going to invest the time to do it right the results will always be disappointing. In the end we left most of both dishes on the plates, and when the waitress asked if we wanted the left-overs boxed up we said no thanks. Despite having eaten lightly though, what we did eat was so heavy we were both a bit uncomfortable on the walk home. So disappointing, I really wanted to love this place but with all three of the dishes we tried falling so short I don't think I could recommend it for dinner.
The atmosphere was nice, with soothing decor and interesting art on the walls. All the people around us seemed to be enjoying their food, so perhaps we just had bad luck with what we ordered? If I lived in the area I might go back and try again as I love to support vegan restaurants and there were some interesting items on the breakfast menu.

So many quality options for the gluten sensitive. Everything is completely vegan, and the menu boasts incredible variety. The service was fantastic and friendly. The bill was slightly higher than expected, but with all of the leftovers we certainly managed to have more than one meal out of the evening!

"Take your reluctant meat-eating friends" to this Uptown vegan institution and they're sure to be "surprised" by the "admirable job" its "creative" kitchen does of designing "tasty" dishes, from "to-die-for" seitan salad to "ridonkulous" cauliflower wings; while service varies a bit, the "fun atmosphere", fueled by local beer and wine, never wavers.
